Indian Mains
Rajma Masala
Red kidney beans, slow-cooked in a masala built from scratch.
Rajma is one of those dishes that every Indian household makes differently, and everyone thinks their version is the best. Mine starts with dried red kidney beans, soaked overnight and pressure-cooked until they are soft but still hold their shape. The masala is built from scratch: tomatoes cooked down with ginger, garlic, and whole spices bloomed in oil until the kitchen smells like someone's home.
The finishing hit of dried fenugreek leaves changes everything. It adds a bitterness that rounds out the richness of the beans and the sweetness of the tomatoes. It is the ingredient most people cannot identify but would notice immediately if it were missing.
Rajma masala is best with jeera rice and something to soak up what is left in the bowl. It is the kind of dish that does not try to be exciting. It is just deeply satisfying, the way comfort food should be.
