Toronto Canteen Chole Masala with dark tangy chickpeas and fresh herbs

Indian Mains

Chole Masala

Dark, tangy, and nothing like the pale version you are used to.

This chole is not pale and soupy. It is dark, tangy, and heavy on amchur and coriander. The chickpeas are cooked until they are tender but still have bite, and the masala clings to every single one instead of pooling at the bottom of the bowl.

The depth comes from the spice ratios. I use a chole masala blend that I make myself, along with pomegranate powder and black cardamom that give it a smokiness most versions lack. The tomato base is cooked long enough to lose its sharpness and develop a natural sweetness that balances the tang of the amchur.

This is the dish your grandmother would make if she had extremely strong opinions about spice ratios. It pairs perfectly with kulcha or jeera rice, and it reheats beautifully the next day. Some people say it is better the second time around.

What makes it different

  • Homemade chole masala blend
  • Amchur for tang
  • Black cardamom for smokiness
  • Pomegranate powder
  • Dry, thick masala coating
