Dhamaka Chicken Biryani

Twenty-four hours in the making. Worth every minute.

This biryani starts the day before you eat it. Chicken thighs go into a yoghurt marinade with turmeric, red chili, ginger-garlic paste, and a garam masala I blend fresh for every batch. They sit overnight, the yoghurt tenderising the meat while the spices work their way through every fibre. By morning, the chicken has transformed.

The rice is long-grain basmati, soaked and parboiled with whole spices until it hits exactly seventy percent cooked. There is a ninety-second window where it bends without breaking. That is when I drain it. The layering comes next: ghee, marinated chicken, rice, caramelised onions, saffron milk, fresh mint. Each layer carries its own flavour. The pot gets sealed with dough, trapping every molecule of steam inside.

When I break the seal, the smell fills the entire kitchen. The chicken is impossibly tender. The rice is distinct but infused. The saffron streaks gold through the layers. This is the biryani I have been refining since I first started cooking, and it is the dish people come back for again and again.

What makes it different

  • 24-hour yoghurt marinade
  • Hand-ground garam masala
  • Saffron-infused basmati
  • Dum-cooked in sealed pot
  • Caramelised onions
